Original Blue-Stuffed Burger with Fig Jam & Arugula
Makes 4 burgers
1 – 1.5 pounds ground beef
½ teaspoon salt
½ teaspoon freshly ground black pepper
4 ounces Point Reyes Original Blue, crumbled
4 burger buns
1 stick butter, room temperature
1 large handful arugula
1 teaspoon olive oil
Salt & pepper
4-6 tablespoons fig jam
In a mixing bowl, combine ground beef with salt and pepper. Mix together with clean hands. Form beef into 8 equal patties. Press crumbled Original Blue into “patties,” placing one on top of each of 4 of the beef patties. Top with remaining beef patties, pinching the edges to seal the cheese completely.
Butter the inside of the burger buns, both the top and bottom halves. Set aside.
Heat a cast iron skillet or griddle over medium-high heat for 2-3 minutes. Place patties in the pan. Cook burgers about 3 minutes on each side for medium-rare, 4 minutes on each side for medium. Remove burgers to a platter, cover platter with aluminum foil and let burgers rest 5 minutes. Wipe out skillet with a paper towel.
Toast buns in cast iron skillet, over medium heat, split side down, for 1-2 minutes, until brown.
In a small bowl, toss arugula in olive oil. Season with salt & pepper.
To assemble, spread fig jam on the bottom bun. Top with burger patty, arugula and top bun. Serve immediately.
