Serves 4 as appetizer
1 pie dough, store-bought or homemade
6 Figs, stems removed & halved
2 oz Point Reyes Original Blue at room temp
1 tablespoon balsamic vinegar
1 tablespoon honey
1 egg
Toasted pistachios or walnuts
Preheat oven to 400˚F.
On a lightly floured surface, roll pie dough into a square, roughly 12x12 inches. Cut into twelve 2.5 - 3" squares.
In a medium bowl, combine balsamic and honey. Add figs to the bowl, tossing to coat.
Evenly sprinkle Original Blue on dough squares then top with a fig half (positioned in one corner of the square), skin-side down. Fold pie dough around fig from each of the three bottom corners (it will look like a diaper on the fig). Continue until all figs and pie dough are used. Place completed figs on parchment-lined sheet pan.
Whisk egg into the remaining vinegar-honey mixture. Brush on top of each fig pastry.
Bake 18-20 minutes until pastry is golden. Transfer figs to serving platter, top with chopped nuts and serve.
