Original Blue Figs in a Blanket

Ingredients

  • 1 pie dough, store-bought or homemade
  • 6 Figs, stems removed & halved
  • 2 oz Point Reyes Original Blue at room temp
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 egg
  • Toasted pistachios or walnuts

Instructions

  1. Preheat oven to 400˚F.
  2. On a lightly floured surface, roll pie dough into a square, roughly 12x12 inches.  Cut into twelve 2.5 - 3" squares.
  3. In a medium bowl, combine balsamic and honey.  Add figs to the bowl, tossing to coat. 
  4. Evenly sprinkle Original Blue on dough squares then top with a fig half (positioned in one corner of the square), skin-side down.  Fold pie dough around fig from each of the three bottom corners (it will look like a diaper on the fig).  Continue until all figs and pie dough are used.  Place completed figs on parchment-lined sheet pan. 
  5. Whisk egg into the remaining vinegar-honey mixture.  Brush on top of each fig pastry. 
  6. Bake 18-20 minutes until pastry is golden.  Transfer figs to serving platter, top with chopped nuts and serve.
