5 oz wedge Point Reyes Original Blue
⅓ cup flour
a couple pinches salt & pepper
⅓ cup panko or regular bread crumbs
1-2 teaspoons fresh herbs (thyme, rosemary & sage are great choices)
1 egg, beaten
Fruit jam & baguette, for serving
Preheat oven to 425F. Line a small sheet pan with parchment paper and set aside.
Set up dredging station: one shallow bowl with flour, salt & pepper; one with beaten egg; and one with panko & herbs.
Dip Original Blue wedge into flour first (dust off any excess), then beaten egg, then panko, making sure each side is coated.
Place onto prepared sheet pan and bake for approximately 12-15 minutes. Check frequently, making sure crust doesn't burn.
If needed, convect or broil for a couple more minutes until brown. Remove from oven. Serve immediately with baguette and jam.
