Original Blue, Bacon & Onion Jam Burger

4-8 slices bacon, cooked & drained
1 pound ground beef
½ teaspoon salt 
½ teaspoon freshly ground black pepper
4 brioche buns
Lettuce leaves
¼ - ½ cup store-bought onion jam
4 ounces Point Reyes Original Blue

 

In a mixing bowl, combine ground beef with salt and pepper. Mix together with clean hands. Form beef into four patties.

 

Prepare gas or charcoal grill. Place patties on heated grill and cook for about 3 minutes. Flip burger and cook for another 3-4 minutes. (Cook longer for a more well done burger.) Alternatively, burgers can be cooked on the stove in a cast-iron or non-stick pan over medium heat. 

 

To assemble burgers, place lettuce leaf and bacon strips on bottom bun. Follow with burger patty, onion jam and crumbled Original Blue. Top with top bun.

 

Serve immediately.
