This cheese is very good and a solid 4 in my books. Why not a 5? Well, I made the mistake of opening Quinta first and nothing was able to top it (not to mention Quinta is a little cheaper.
Cornelia is really good, definitely smooth, I highly recommend cutting off the rind. I prefer Cornelia sliced super thin with a cheese cutter. While this cheese is good at room temperature, I don’t like it fully melted.
