Makes 4 burgers
1 pound ground beef
pinch of salt & pepper
1 yellow onion, thinly sliced
4 hamburger buns
mayonnaise
sliced tomato
5 oz Point Reyes Original Blue
Other optional condiments:
lettuce, pickles, ketchup, BBQ sauce, mustard, etc.)
Place ground beef in bowl. Season with salt and pepper. Mix well with clean hands, then form into 4 loose balls, about ¼ pound each.
Preheat griddle over medium-high heat and spray with nonstick spray.
Place the balls of ground beef onto the hot griddle. After about 30 seconds of cooking, use a sturdy spatula to press each patty firmly, smashing the beef into patties, about ¼" thick each.
Place sliced onions on an empty space on the griddle. Sprinkle with a pinch of salt and stir frequently as they cook. Cook about as long as the burgers, until they begin to brown and soften.
Allow burgers to cook for about 2-3 minutes until the edges start to turn brown and crispy. Flip the patties, smash again, and cook for another 1-2 minutes.
Remove cooked onions and patties from the griddle.
Assemble the burgers by spreading mayo (and other optional condiments) on the bottom bun. Top with a tomato slice, burger patty, grilled onions and Original Blue before closing with top bun.
Serve hot.
