Original Blue, Bacon & Fig Grilled Cheese
Makes 4 sandwiches
3 tablespoons butter, softened
8 slices Raisin Bread
6 tablespoons fig jam
12 ounces Point Reyes Toma, shredded
½ cup crumbled Point Reyes Original Blue
6 slices cooked bacon, cooked & cut in half
Butter one side of each bread slice, then flip and spread the other sides with fig jam. Top with equal amounts of Toma, Original Blue and bacon, then remaining bread slices, ending with the butter on the outside of your sandwiches.
Heat a large skillet over medium heat. Cook the sandwiches until bread is golden brown and cheese is melted, about 2-3 minutes per side.
