Fig Brochettes with Original Blue Prosciutto
12-16 ripe black mission figs, washed and cut in half
1/2 cup crumbled Point Reyes Original Blue
8 large slices Prosciutto
Wooden skewers, soaked in water 20 minutes
2 tablespoons honey
Preheat charcoal or gas grill. Skewer figs, about 3-5 halves per skewer. Cook figs, flesh side down, on grill just until flesh becomes caramelized. Remove from heat and place on serving platter. Arrange prosciutto around figs on platter, drizzle with honey and top with crumbled original blue.
