Creamy Original Blue Dressing
Makes about 2 cups
1 cup mayonnaise
1 cup crumbled Original Blue (about 4 ounces)
1/2 cup buttermilk
1 shallot, peeled
1 tablespoon freshly grated lemon zest
1/2 teaspoon kosher salt
2 tablespoons minced fresh flat-leaf parsley
Freshly ground black pepper
Combine all ingredients in food processor or blender. Pulse to combine, leaving the mixture somewhat chunky. Season with salt and pepper to taste.
Original Blue Dip
Makes about 2 cups
1 cup crumbled Point Reyes Original Blue (about 4 oz.)
½ cup sour cream
¼ cup mayonnaise
1 tablespoon buttermilk
1 tablespoon lemon juice
pepper, to taste
minced chives and parsley, for garnish
Combine all ingredients in a small bowl. Garnish with extra crumbles of Original Blue, minced chives and parsley.
