Cranberry Original Blue Ball
8 oz Cream Cheese , softened
6 oz Original Blue, crumbled and softened
1 tablespoon minced shallot
1 teaspoon minced fresh rosemary, divided
¼ cup dried cranberries , chopped and divided
¼ teaspoon black pepper
¼ cup chopped toasted walnuts
In a mixing bowl, combine cream cheese and blue cheese until mixed well.
Add shallot, ½ teaspoon rosemary, 2 tablespoons cranberries and black pepper. Stir to combine. Taste the mixture and adjust seasonings, as needed.
Lay plastic wrap on surface and place cheese mixture on top. Wrap the plastic wrap tightly around cheese and shape the mixture into a ball. Chill until the cheese ball is firm, about 30 minutes.
Combine remaining rosemary, cranberries and walnuts and on a plate. Roll the chilled cheese ball in the mixture. Refrigerate covered until ready to serve. (Can make a day ahead.)
Garnish with rosemary sprigs and serve with your favorite crackers.
