Makes 1 sandwich
This summer sandwich is the perfect balance of sweet, savory, and spicy. Creamy Brie and salty prosciutto meet juicy peaches with a kick of chili crisp, all piled onto a crusty baguette with peppery arugula. Simple to prepare but impressively flavorful - great for lunch, dinner or a beach picnic.
1 demi baguette or 6” piece of regular baguette cut in half horizontally
½ cup sliced fresh peach
Pinch of salt
2 teaspoons chili crisp
4 oz Point Reyes Classic Brie, sliced
3 oz sliced prosciutto
1 small handful fresh arugula
In a small bowl toss peach slices with chili crisp and a pinch of salt.
Assemble sandwich: Place brie on bottom slice of bread. Top with prosciutto, peaches and arugula. Close with top half of bread and serve.
