Toma & Peach Toasts with Pistachios & Honey

Makes 4 toasts

 

This is the ultimate no-fuss snack or light lunch. Golden buttered brioche gets topped with creamy Toma, fresh peaches, and crunchy toasted pistachios, then finished with a drizzle of honey and flaky sea salt. It comes together in minutes and tastes far more special than the effort it takes. Swap peaches for plums or apricots depending on what's at its peak – for an equally delicious combination.  

 

4 slices sliced brioche bread
2 tablespoons butter, softened
3 ounces Point Reyes Toma, thinly sliced
1 large peach, thinly sliced
1 tablespoon chopped toasted pistachios
1 tablespoon honey
Flakey sea salt

 

Evenly butter bread on both sides of each slice. In a nonstick skillet over medium heat, cook buttered bread until it is golden brown, flipping frequently to evenly brown both sides. Place bread on serving plate.

 

Top each slice of bread evenly with Toma, followed by peach slices. Sprinkle toasted pistachios over the top. Drizzle toasts with honey and finish with a generous pinch of flakey sea salt.

 

Serve.
