Point Reyes Original Blue Compound Butter
Makes 2 logs

8 oz butter at room temp
2 tablespoons minced fresh herbs (parsley, sage, thyme, chives, rosemary all work well)
2 ounces Point Reyes Original Blue, crumbled
½ teaspoon salt
½ teaspoon black pepper

With a stand mixer using the whisk attachment, whip the butter and herbs at medium speed until well combined. Add Original Blue, salt & pepper, mixing briefly to blend. Remove butter from bowl and spoon onto parchment paper or plastic wrap. Roll into a tight log. Chill for 2 hours before serving. Serve on top of hot grilled steak, roasted potatoes, corn or fresh baked bread.
