Cheesy TomaProvence Breakfast Tortilla
Makes 1 tortilla
2 teaspoons butter
1 egg, beaten
1 6" flour tortilla
¼ cup shredded Point Reyes TomaProvence (about 2 oz)
1 piece bacon, cooked & crumbled
½ avocado, sliced
chopped scallions or chives for garnish
Heat butter in a small (6-inch) non-stick pan over medium heat. Pour egg into the skillet and cook just until beginning to set on the bottom, about one minute. Cover with tortilla, cook a few more seconds, then use a spatula to carefully flip the egg and tortilla so the tortilla is now on the bottom.
Sprinkle TomaProvence on top, followed by bacon and avocado slices.
Fold the tortilla in half over the filling.
Garnish with scallions or chives. Serve immediately.
