Caramelized Onion & Toma Cheese Ball


Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • Salt and pepper
  • 8 oz cream cheese, softened
  • 1 teaspoon Dijon mustard
  • 4 oz Point Reyes Toma, grated
  • ¼ teaspoon fresh thyme, chopped
  • ¼ cup fresh parsley & chives, minced (for garnish)
  • 1 teaspoon paprika
  • Crackers for serving

Instructions

  1. Heat olive oil in a medium sauté pan over medium heat. Add onions, season with salt and pepper and cook, stirring occasionally, until caramelized, about 15-20 minutes. Remove from heat and cool.
  2. In a mixing bowl, combine cooled caramelized onions, cream cheese, Dijon, Toma and thyme.  Form cheese mixture into a ball, wrap in plastic wrap and refrigerate for at least 1 hour.
  3. In a mixing bowl, combine minced parsley, chives and paprika.  Remove plastic wrap from cheese ball and roll in herb-paprika mixture.
  4. Serve with crackers.
