Caramelized Onion & Toma Cheese Ball
2 tablespoons olive oil
1 large yellow onion, thinly sliced
Salt and pepper
8 oz cream cheese, softened
1 teaspoon Dijon mustard
4 oz Point Reyes Toma, grated
¼ teaspoon fresh thyme, chopped
¼ cup fresh parsley & chives, minced (for garnish)
1 teaspoon paprika
Crackers for serving
Heat olive oil in a medium sauté pan over medium heat. Add onions, season with salt and pepper and cook, stirring occasionally, until caramelized, about 15-20 minutes. Remove from heat and cool.
In a mixing bowl, combine cooled caramelized onions, cream cheese, Dijon, Toma and thyme. Form cheese mixture into a ball, wrap in plastic wrap and refrigerate for at least 1 hour.
In a mixing bowl, combine minced parsley, chives and paprika. Remove plastic wrap from cheese ball and roll in herb-paprika mixture.
Serve with crackers.
