Baked Tomatoes with Toma, Bay Blue & Bacon

Serves 4 as appetizer


2-3 tomatoes, sliced into rounds about ⅛" thick

½ cup shredded Point Reyes Toma (about 2 oz)

¼ cup crumbled Point Reyes Bay Blue

1-2 slices bacon, cooked crisp and crumbled

2 tablespoons chopped fresh basil


Preheat oven to 400°F. Line a baking sheet with parchment paper.

Place tomato slices on prepared baking sheet.  Top tomato slices with equal amounts of shredded Toma. 

Bake for 8-10 minutes or until cheese is melted and bubbly.  Remove from oven.  Immediately top with equal amounts of crumbled Bay Blue, bacon & basil.

Serve immediately.
