TomaRashi Loaded Sweet Potato Fries

TomaRashi Loaded Sweet Potato Fries

Serves 2-4

 

1 15 oz. bag of frozen sweet potato fries

8 oz. Point Reyes TomaRashi, shredded (about 3 cups)

½ cup mayonnaise

1 tablespoon sriracha

1 teaspoon toasted sesame oil

Toasted nori or seaweed snack

Minced fresh cilantro

Red pepper flakes

 

Heat oven to 400°F.  Line a sheet pan with parchment paper.

 

Cook sweet potato fries according to package directions. 

 

While fries are cooking, make sesame-sriracha mayonnaise.  In a small bowl, combine mayonnaise, sriracha and sesame oil.  Set aside.

 

Top cooked fries with shredded TomaRashi and return to oven on the top rack.  Cook for an additional 5-10 minutes until cheese is melted and bubbly.  Remove from oven.

 

Top with a drizzle of sesame-sriracha mayonnaise, crumbled nori or seaweed snack, cilantro and red pepper flakes.  Serve immediately.

 

Note:  You’ll likely have some sesame-sriracha mayonnaise leftover.
