Sweet & Spicy TomaRashi Grilled Cheese

Sweet Italian Bread (just not a sourdough)
1 ½ oz TomaRashi, grated
2 slices Mortadella
1 – 2ea Medjool Dates, depending on the size, diced
2 Tbsp White Sesame Seeds, toasted
¼ tsp Crunchy Salt, Maldon will work
1 tsp Fennel Seeds, lightly toasted
Unsalted Butter, softened
Place the sesame seeds, fennel seeds and salt in a mortar & lightly crush to break up the seeds.
Pour out onto a plate.
Spread softened butter onto one side of each slice of bread.
Place the buttered side down in the seeds & press so that the bread is well coated in seeds.
Keep the seed side down as you build the sandwich.
Place half the cheese on one slice of bread, top with mortadella & chopped dates, then add the remaining cheese.
Top with the other slice of bread.
Cook in a pan over medium low heat until all the cheese is melted & the bread is golden.
Eat immediately.
