Roasted Sweet Potato and TomaRashi Sandwich with Sriracha Mayo

Ingredients

  • 2 Essential Baking Company mini demi baguettes
  • 1 large sweet potato, cut into ¼” thick slices
  • Olive Oil non-stick spray
  • ¼ cup mayo
  • 1 - 1.5 tablespoons Sriracha (depending on your spice preference)
  • Salt
  • ½ cup arugula
  • ½ red onion, thinly sliced
  • 6oz Point Reyes TomaRashi, rind removed and sliced

Instructions

  1. Heat oven to 400 degrees.  Bake Essential Baking Company mini demi baguettes according to package directions.  Let cool on cooling rack, then cut in half horizontally. 
  2. Line sheet pan with parchment paper and spray with Olive Oil spray.  Lay sweet potato slices on pan and spray the top side with Olive Oil spray.  Sprinkle with salt and put in the oven to roast, about 15 minutes, until fork tender. 
  3. To make the spicy mayo, combine mayo and sriracha in a bowl. Once combined, spread onto each baguette half (top and bottom).
    Assemble sandwiches:  Layer slices of sweet potato, TomaRashi and red onion on to bottom half of baguettes.  Top with arugula and the top half of baguette and serve.
