Makes 2 sandwiches
2 tablespoon butter, softened
4 slices brioche bread
4 ounces Point Reyes Brie in thick slices (rind left on)
½ cup mixed berries (we use raspberries and blackberries)
Honey drizzle, optional
Evenly spread softened butter on outsides of bread slices and lay bread, buttered-side-down on clean work surface. Evenly distribute brie on each slice of bread. Place berries on top and close sandwiches (berries will end up in between cheese layers).
Heat a nonstick or cast-iron skillet over low-medium heat and add sandwiches. Flip every 1-2 minutes, so bread doesn't burn but gets evenly brown and cheese melts, cooking about 5 minutes total. Remove sandwiches from pan with a spatula.
Drizzle with honey, if desired, and serve immediately.
