Herb Roasted Potatoes with Bay Blue
2 pounds baby potatoes, cleaned and halved
1 ½ tablespoons olive oil
1 tablespoon mixed fresh herbs (we like Rosemary, Chives and Thyme)
Kosher salt and fresh ground black pepper
⅓ cup crumbled Point Reyes Bay Blue
Preheat oven to 425°F.
Place potatoes in a medium bowl. Add olive oil, herbs, salt and pepper, tossing together to evenly coat. Place in single layer on sheet pan and bake for about 20-30 minutes, stirring midway through cooking time, until fork tender.
Remove the potatoes from oven and place in a serving bowl. Immediately toss potatoes with crumbled Bay Blue. Season with additional salt and pepper, as needed.
