 Bay Blue & Maple Cheese Log


2 cups shredded Point Reyes Toma (about 8 oz)

1 cup crumbled Point Reyes Bay Blue (about 4 oz)

4 oz cream cheese, softened

4 tablespoons butter, softened

¼ cup minced chives

1 tablespoon maple syrup

1 tablespoon grainy mustard

½ cup chopped almonds

2 tablespoons minced parsley


Place Toma, Bay Blue, cream cheese, butter, chives, maple syrup and mustard in a mixing bowl and mix until well-combined.


Place the cheese mixture onto a sheet of plastic wrap and form it into a log. Refrigerate for an hour or overnight.


Combine almonds and parsley in shallow dish.  Roll the cheese log to coat.
