Pimento cheese rolled in bacon

Pimento & Bacon Cheese Ball

1 container Point Reyes Pimento Cheese Spread
8 ounces cream cheese, softened
½ cup crumbled cooked bacon (about 4 pieces)
2 tablespoons fresh minced herbs (thyme, parsley or chives or a mix)

 

Combine Pimento Cheese Spread and cream cheese in a large bowl, mixing well.  

 

Spoon cheese mixture onto a large sheet of plastic wrap. Form into a ball, pulling the plastic wrap around it and shaping with your hands. Chill for at least a couple hours or overnight.

 

Combine bacon and herbs in a shallow bowl. Unwrap cheese ball and gently roll in bacon mixture, coating well. 

 

Place on a serving plate. Serve immediately, or cover and refrigerate until ready to enjoy.
