Olive and Gouda Bread
Makes 1 loaf
1 ¾ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
3 eggs
⅓ cup milk
⅓ cup olive oil
1 cup mixed pitted olives, roughly chopped
4 ounces Point Reyes Aged Gouda, rind removed and diced
Grease a 9×5” loaf pan and preheat oven to 350 F.
Mix together the flour, baking powder, and salt in a medium.
In another bowl, beat the eggs, oil and milk until combined.
Add the egg mixture to the dry ingredients, and mix just until incorporated.
Add olives and cheese, folding in gently.
Bake 25-30 minutes, until the top of loaf is browned and a tester inserted into cake comes out clean.
