Buttermilk-Gouda Waffles with Brown Sugar Maple Syrup

Makes about 8 waffles

 

The butterscotch flavor of our Gouda makes a perfect addition to your morning waffle routine. Top with fresh peaches or berries, sauteed apples or chocolate chips to change things up, and don’t forget to finish with a little extra shaved Gouda on top.

 

Waffles:
2 eggs
1 ¾ cup buttermilk
1 stick butter, melted and cooled to room temperature
1 ¾ cup flour
2 tablespoons brown sugar 
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
½ cup shredded Point Reyes Gouda (about 2 oz) + more for finishing
Nonstick cooking spray or butter

 

Syrup:
1 cups brown sugar
1 cup maple syrup
½ cup butter

 

For Waffles:
Whisk eggs, buttermilk and melted butter in a large bowl. In another bowl stir dry ingredients together, then add to egg mixture and whisk just until smooth. Stir in shredded Gouda.

 

Heat a waffle iron and butter lightly or spray with nonstick cooking spray. Ladle batter onto iron (about 1/4 cup for an 8-inch round iron), close, and cook just until light golden brown. 

 

Serve immediately, topped with Brown Sugar Maple Syrup and extra shaved Gouda. Add berries or peaches, if desired.

 

For syrup:
Combine brown sugar and maple syrup in a small pan. Bring to a boil over low-medium heat, stirring until the sugar has dissolved. Add the butter and stir until the butter has dissolved. Remove from the heat.
